use the 'local' config directive:

--local host
Local host name or IP address. If specified, OpenVPN will bind to this 
address only. If unspecified, OpenVPN will bind to all interfaces.


    So, basically something like:

local 192.168.210.141

    in your conf file. Of course, replace 192.168.210.141 with the IP 
address you want OpenVPN bind to.
