Hi,
I have set up an openvpn server in tun mode and I can use it as a smtp server. How could I reach another web server (with a routable IP address) in the same subnet of the VPN server ? Maybe, the tap mode is suitable for this case. Anyway, how could I operate ?

You can use both tun/routing or tap/bridging.

If you use routing you will have to set up routing to work.
Read the howto.
