Hi,
I have set up an openvpn server in tun mode and I can use it as a smtp server. How could I reach another web server (with a routable IP address) in the same subnet of the VPN server ? Maybe, the tap mode is suitable for this case. Anyway, how could I operate ?

There's no need to switch to tap: Just add a route to that IP address range using the route directive. If this range includes the IP address you're using to connect to the VPN server, be sure you add an explicit host route specifying that connections to this host should still go through the preexisting (non-VPN) gateway.
