I have tried to use ifconfig tun hw MA:CA:DD:RE:SS:!! with no chance.
The correct syntax for ifconfig should be
ifconfig tunXX hw ether XX:XX:XX:XX:XX:XX
Otherwise you can try to use macchanger, which is available in the unstable Debian branch or under http://www.alobbs.com/modules.php?op=modload&name=macc&file=index.
