I just (hopefully) got my server/clients going using certs. I generated 3 client certs. I may need more in the future. Can I simply go back to my server and run the generation program and create client04, 05, 06..... at a later time without affecting anything else?

Absolutely. If you are using easy-rsa, just don't forget to run ./vars before running ./build-key[-pkcs12]. Nothing is affected by you creating more key/certs.

You don't even need to run easy-rsa on the same machine as your openvpn server, so nothing could possibly be affected by you creating more key/certs...
